The history and growth of Baldinger Bakery resembles that of its hometown, St. Paul. This family-owned commercial bakery began selling bread on local street corners in the late 1800s, and today is one of the largest suppliers of buns to restaurant chains across the country. Baldinger relied on PCL to complete its 145,000-square-foot facility on a fasttrack schedule, in order to capture rapidly emerging business opportunities.
Owner-provided equipment was coordinated by PCL and includes proofers, ovens, packaging, mixers, metal detectors, and splitters. Three mezzanines were added for equipment and storage requirements. Employee service components include restrooms, break rooms, and gowning rooms.
Baldinger Bakery is the anchor business in St. Paul’s 61-acre Beacon Bluff business park, developed by the St. Paul Port Authority on a site once owned by 3M. The new Baldinger Bakery produces 65,000 hamburger buns daily and is LEED certified.
