The Bake Fresh Bakery, located in the heart of Commerce City, Colorado, produces 25,000 pastries per day and distributes them to 240 stores in the metro area. This design-build renovation of an existing food processing facility consisted of renovating the office area and restrooms, and installing new epoxy flooring, wall treatments, and ceiling tile. All of this was accomplished while pastry production on the existing food line was in full operation. The end product is a clean, efficient, and productive “new” bakery with a 42% increase in pastry production.
The bakery could not be shut down for even a single day during the renovation. PCL's Special Projects division rose to the challenge, and went to work installing air-tight temporary partitions and phasing the project to ensure a zero percent loss in production during construction. The phasing and partitioning plan was key to successfully expanding the bakery.
