PCL expanded Summit Brewing, located in the St. Paul Port Authority's Crosby Lake Development. The cellar expansion added approximately 7,600 square feet to Summit’s existing brewing fermentation cellar. Twelve new fermentation tanks were installed, allowing advancement of its product line and increasing manufacturing production. The cellar is oversized to allow for the installation of twelve additional tanks in the future.
The exterior building enclosure included insulated, precast panels and a barrel-vault metal roof structure with a roof hatch for the future equipment expansion. The interior flooring material is a unique German tile product manufactured specifically for chemical resistance, hygienic properties, and slip resistance. Integrated stainless steel drains were incorporated into the floor for fermentation on tank CIP drainage.
